Bikini

Serves 10 guests

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Put all the components into a pan, bring to a light boil, mixing until the sugar dissolves. After that, turn off the stove and leave to reach room temperature fully. Pour to a sterilised bottle, close it and store chilled, where it will keep for around a month.

For the Premix: Combine all the liquids into a sizeable container, leave to sit for an hour, then pass it through preferably using cheesecloth, so it's completely strained.

When ready to serve: Add 85ml of the batch mix to a mixing glass filled with ice, and agitate lightly for about 60 seconds until cold. Strain to a frosted cocktail glass or similar, garnish with the cranberries adding the final touch using a light spray of mandarin oil over the top.
